PRODUCTION
A recipe passed down from our grandparents: adding a few drops of gin to vermouth. PICOFINO has reimagined this tradition by starting with a wine base macerated with herbs and botanicals, replacing the grain or wine alcohol typically added to vermouth with Picofino Original Gin to reach 15º. As the result, the gin blends seamlessly, creating a rich, multi-layered vermouth with a distinctive personality

TASTING NOTES
On the nose, it is highly complex —a smooth liqueur with sweet and citrus notes, hints of vanilla, anise, and cinnamon, even evoking old-fashioned cola sweets. The gin adds an elegant touch, and the alcohol is remarkably gentle on the senses
On the palate, the initial sweetness of cinnamon and anise harmonises beautifully with the bitter finish of wormwood, rounded off by the gin’s complexity. The result is a highly aromatic and smooth experience. Notably, it achieves a perfect balance between bitterness and sweetness—one of the hardest feats in vermouth-making
Its colour is a deep, almost black wine shade with golden highlights

Picofino is a beautiful clandestine story...

The project took nearly 10 years to come to fruition. It all started in Albuerne, a small village on the Asturian Cantabrian coast—so small that it doesn't even have a bar—where a lover of spirits known as Picofino seeks to create a completely unique gin, crafted artisanally, conducting dozens of tests in small batches that he gave to his friends.

With the help of a distiller friend from Ourense and an old Portuguese copper still, over a period of 8 years, he released a different gin annually. Each year, he gathered the best of the previous year and presented it at a summer party at his place for friends to taste, including some restaurateurs, bartenders, mixologists, and, almost all, compulsive foodies. They all agreed: every year, the gin got better.

The production of Mio Gin (meaning 'his gin') was about 100 numbered bottles per year, entirely artisanal and clandestine, to be shared freely with his own. And so we arrived at the end of 2019, when Picofino Artisan Spirits was born. The rest... is history.
